Healthy, Delicious, and Easy-Pizzey Pancakes

Do you know that feeling when you want to eat ‘healthier,’ but you’re afraid that it means giving up the “pleasure foodS”… I totally understand that 🙈 To be honest with you, I’m all about finding a balance, so I can enjoy both the ‘most indulgent’ foods 😇 and also healthy, nourishes food 🥳

But at the same time, I often find that one doesn’t have to come at the expense of the other… Nowadays, you can find many healthy foods in a ‘decadent’ and especially indulgent style.”

One of my favorite foods since childhood has been pancakes. Honestly? Since I was 12, I’ve been making late-night pancakes, frying them up, and pampering them with everything possible…

Over time, I’ve had the chance to try all sorts of different recipes I’ve found or just created myself 🙂 But, when the kids came along, suddenly I felt the urge to also try healthier recipes for this tasty and indulgent dish… Until I found the exact recipe that feels both delicious, indulgent, and healthy.

Today, I’m totally playing around with recipes—from the ones loaded with butter and chocolate 😉 to this healthy and pleasurable one.

⇇ Here’s what you need

Preparation time: 15 minutes
Enough for Approximately 15-20 small pancakes

INGREDIENTS

1 cup oat flour (I grind the oats into fine flour)

1/2 cup almond flour (I also grind the almonds into flour)

1 teaspoon baking soda

1 packet baking powder

1/2 banana (barely noticeable in taste, mainly helps with texture)

1 cup almond rice milk (I personally love the texture it gives the pancakes. Of course, you can substitute with any other milk)

2 eggs

3 tablespoons organic coconut sugar (or any other natural sweetener)

INSTRUCTIONS 

  1. In a mixing bowl, whisk everything together until smooth.
  2. Fry in a pancake/ small pan.

You can sweeten with honey, eat with yogurt, add banana… or whatever suits your fancy!”🤗
